You are lucky enough to have the best mozzarella shop right opposite your accommodation, right on the other side of the street

First of all you need to know that there is a difference between mozzarella and fior di latte.
This difference is known only in a few areas, so don’t worry if you knew nothing about it. Even if all over the world there is only one word to define this Italian cheese. There is a distinction between two types of this fresh soft cheese: mozzarella di bufala and mozzarella fior di latte.
Mozzarella di bufala, or simply mozzarella is made from buffalo’s milk, and the DOP is only produced in Battipaglia (Salerno) , Caserta, and south of Lazio On the other hand, fior di latte is made from cow’s milk.

Neapolitans eat mozzarella only if produced on the same day they eat it.

Tips:

You must never put mozzarella in the fridge. You can keep it one day outside the fridge, at room temperature if produced in that day. When you cut mozzarella to have slices, you have to see the milk that comes out of it (Neapolitans say: “mozzarella must cry”. If it “cries”, this means that it is fresh and Neapolitans enjoy to eat it).
